Certainly a fragrant time of year

Wow, last time I asked about favourite rhubarb recipes, and many of you were very generous in sharing them - everything from Shelley’s Rhubarb muffins to some wonderful crisps and drinks, and, and, and 🙂 Thank you all for sharing. The winner of the contest for a $30 gift card from Sisterhood Fibres was Chris Thistle-English who shared this recipe

Rhubarb Punch ~ Makes about 2.5 litres syrup

4 litres chopped rhubarb  750 ml water

Combine rhubarb and water in a large pot. Simmer until tender.  Strain, then chill juice. There will be about 1 - 1.5 litres of juice. ( may be frozen at this point.)

To the chilled juice, add 180 ml  frozen lemonade concentrate ( thawed), 360 ml water and 125 ml sugar.

Mix well. When ready to serve, mix with ginger ale. ( about 3:1 ginger ale to syrup, or to taste. ) This keeps well, refrigerated for several weeks. For an adult version, combine a little syrup with gin and tonic!

I don’t know about you, but I am looking forward to strawberry season - Margaret Minney tells me that they expect to open their u-pick in late June.
